Founded in 1808, the Distillerie Lemercier is the oldest distillery in Fougerolles. Early on the distillery started to produce Absinthe with great success. However the Great War brought with it a ban on the production of absinthe in 1914, which struck a harsh blow to the distillery. The distillery did however not remain dormant and kept introducing new spirits in their range.
Since 2000, the distillery has revived its old recipe to give life to a new range of Absinthes. Wormwood, green anise, star anise, fennel, gentian or mugwort are some of the ingredients used. Nowadays their range of Absinthe is widely considered to be one of the best available. They are also one of the only distillery to produce bitter Absinthe.
Being located in Fougerolles, the Kirsch country, Lemercier also crafts delightful Kirsch infused griottes. These small sour cherries are often used as a garnish for cocktails or as an ingredient for cooking and baking.
